Leading the team as Executive Chef, Andrew Hickie has cooked for some of the world’s biggest celebrities having travelled the globe for years aboard the private super yacht for billionaire David Geffen, where he managed VIP dining experiences for the likes of Tom Hanks, Oprah, Tony Blair, Robert De Niro, Ellen De Generes and Bruce Springsteen to name a few.
After years abroad, Andrew returned to Australia as Executive Chef for Henley’s Wholefoods to lead the launch and roll-out of health food cafes in Sydney including managing all staff, kitchen fit-out and menu creation.
Andrew’s career continued in the business side of the kitchen – next leading the Menu Development for ‘Stix’, one of Australia’s premium caterers, where he managed the clients Qantas First Class, Etihad and Macquarie Bank.
Prior becoming a restauranteur, Andrew represented 300+ artisan providore clients in food distribution across Eastern Sydney – connecting the best produce to the best Chefs.
Sarah Smith has spent 20+ years working in the communications industry with leading brands in the music, entertainment, media, travel and not-for-profit sectors.
With a Masters in Journalism, Sarah began her career writing travel editorial for national tourism media. She hosted media from around the world to drive domestic tourism and support local operators. She also worked alongside Tourism Australia as part of the Sydney 2000 Olympics Media Centre team.
In 2009, she helped launch the Sydney International Food Festival (as part of Destination New South Wales’ Crave program) for Fairfax Media. She also directed the national publicity campaign for the prestigious SMH Good Food Guide.
Since 2011 Sarah has led the Communications team for Sydney Opera House including Vivid Music and Festival of Dangerous Ideas, and was Senior Director for high-profile domestic and international artists and stakeholders at Universal Music Australia. Most recently, Sarah has returned to her stomping ground as Head of Marketing and Communications for Arthur Boyd’s gift to Australia, Bundanon Trust.
Sarah manages Smithy and The Chef’s Events and Wedding Concierge Service.
